Kinda Sorta Homemade

We came back from the farm last weekend with a ton of apples so I had to find a use for them. I came up with the idea of this apple cream cheese coffee cake.

I found a coffee cake mix by Aunt Jemima that worked well for this recipe. It comes with its own baking tray but it was very small so I used an 8x8 dish instead so that I could fit in all of the extra ingredients. I used 3 medium sized apples, sliced and tossed in cinnamon; 1 8 oz package of cream cheese, softened; 1/3 cup of sugar; and 1 egg (in addition to the eggs used in the coffee cake recipe).
I followed the instructions for the coffee cake and poured the batter into the greased 8x8 dish(keep the crumb topping aside for now). Then I mixed the softened cream cheese with the sugar until it was smooth and added the egg. When the egg was completely incorporated, I spooned the cream cheese over the coffee cake batter and swirled it around with a butter knife (you can sort of see the different layers of cake and cream cheese in this side view). I spread the apples out over the top of the cream cheese and cake and then sprinkled on the crumb topping (from the box of the coffee cake mix). The directions on the box said to bake the coffee cake at 375 for about 25 minutes but since my version was thicker it took about 40 minutes.


My resident taste tester loved this recipe as did I. If anyone decides to make it, let me know how it turns out!
